A Word from our Head Sommelier
In Portugal, my grandfather kept six bottles and considered himself a wealthy man. Here I have rather more to look after.
People ask me how I choose. I am not buying for tonight. I am buying for a Tuesday ten years from now, for a Member who has perhaps not joined us yet. And I do not buy labels. A famous name in a poor year is still a poor year.
What I enjoy most is when a Member comes down and tells me what the evening is. An anniversary. A deal finally signed. A friend out from London who thinks he knows wine. Then we find the bottle together.
A cellar that is only admired is a sad cellar. Wine is made to be opened.
